As we embark upon this guided exploration, we traverse a complex network of passageways, cellars, and wells that have been meticulously constructed beneath the heart of Pilsen since the 13th century. This subterranean realm offers a captivating glimpse into the rich tapestry of medieval life and uncovers myriad secrets hidden within the earth's depths. Visitors are invited to delve into the origins and evolution of these underground spaces, observing how they evolved alongside the burgeoning brewing industry and serving as both storerooms and vital communication channels during times of conflict and upheaval.
Our journey begins in what is known as the "ice cellar," an architectural marvel designed specifically for storing ice. This unique facility formed part of the sophisticated cellar system associated with houses granted brewing privileges – located atop the uppermost levels of the cellars, it facilitated the distribution of cold water to the lower fermentation and lager cellars, ensuring optimal conditions for the brewing process.
Subsequent to the establishment of the town’s earliest dwellings equipped with brewing privileges, the cellars underwent gradual expansion and deepening, culminating in the creation of interconnected cellars spanning multiple stories. These underground structures played a crucial role beyond mere storage; they also served as strategic defense mechanisms against warfare and civil unrest. The intricate web of passageways connecting these cells offered a sanctuary for residents during times of peril while simultaneously functioning as conduits for essential supplies.
A testament to the ingenuity of Pilsen’s builders lies in the historical Water Tower dating back to the early 16th century. Constructed during a period of significant technological advancement, this impressive structure features remnants of a 1847 pumping mechanism and chambers dedicated to water columns, feeder tunnels, and a working replica of a water wheel. This monumental engineering feat further underscores the town’s commitment to both sustenance and security, linking seamlessly with the defensive fortifications surrounding the area.
Following our ascent, we conclude our journey at the Brewery Museum, where visitors under the age of 18 may redeem a complimentary beer voucher exchanged for 0.30 liters of Pilsner Urquell beer from selected establishments including Na Spilce, U Salzmannů, and Na Parkánu.
This comprehensive tour encapsulates the essence of Pilsen’s buried heritage, offering a profound appreciation for the city’s architectural prowess, historical significance, and cultural legacy.
